- 500 g Cherries (frozen and pitted)
- 150 g Sugar
- 1 tsp Almond Extract
- ¼ tsp Ground Allspice
- 60 g Pastry Flour (whole wheat)
- 100 g Sugar
- 40 g Plain Flour
- 1 tsp Baking Powder
- ¼ tsp Salt
- 2 large Eggs
- 100 ml Milk
- 2 tbsp Bourbon Extract
- 2 tsp Lemon (peel, finely grated)
- 1 tsp Vanilla Extract

Preheat the oven to 180°C (350°F) Gas mark 4.

Butter an 11x7x2-inch baking dish.

In a large bowl combine the ingredients for the filling; toss well.

Spread the filling evenly in the prepared dish.

In a separate bow whisk the dry ingredients for the topping.

Then gently stir in the wet ingredients for the topping.

Spoon the topping mixture over the filling.
