Baked Feta in Filo Rounds

Baked feta is mouthwateringly tangy and creamy! In this recipe, it’s wrapped in buttery pastry and topped with pistachios, jam, and honey.

Ingredients

  • 8 oz sheep's milk feta cheese (square)
  • 8 phyllo sheets ((filo))
  • 4 tbsp olive oil
  • 2 tbsp butter
  • 8 tbsp jam of choice (fig, apricot or marmalade)
  • 1/2 cup crushed pistachios
  • 2 tbsp honey
  • 2 tsp crushed pistachios
  • edible crushed rose petals (optional)

Instructions

    Preheat oven to 350°F. Grease a 12 mini-muffin pan with oil or cooking spray. Set aside.

    Slice the block of feta into 4 rectangular pieces.

    In bowl melt the butter and olive oil for 30 seconds in a microwave.

    Lay 2 filo sheets at a time on a clean surface and brush or drizzle with melted butter and olive oil to edges.

    Place the feta pieces 2-inches from the bottom in a single row along the filo closest to you (see images).

    Spoon the jam of choice evenly over the feta and sprinkle the crushed pistachios over the jam and balance of filo sheet.

    Carefully pick up the filo sheets closest to you and wrap up and over the filling. Continue to roll the filo until completely used and leave seam side down. Measure 12 pieces and use a serrated knife to cut.

    Bake for about 20 minutes or until filo is golden brown and crispy.

    Remove from oven and let cool 5 minutes. Carefully remove from pan and place on serving tray. Drizzle with honey, sprinkle with crushed pistachios and rose petals (optional) on top and serve warm.
