  • ½ tbsp gelatin
  • 2 tbsp cold water
  • 3 oz crushed cookies (digestive biscuits, graham crackers, etc.)
  • 5 tbsp melted butter
  • 4 oz durian flesh
  • 10 oz cream cheese
  • ½ cup whipping cream
  • 3 tbsp sweetened condensed milk

Instructions

    Bloom the gelatin: Stir the gelatin into cold water and let sit for a few minutes to thicken.

    Make the crust: Mix crushed cookies with melted butter until combined. Press into jars or ramekins and chill in the fridge.

    Mash the durian: Use a fork to mash the durian flesh until smooth. Remove any seeds or large fibers.

    Mix the cream cheese: Beat the cream cheese (room temp) until smooth. Use a hand mixer or a whisk.

    Add durian and condensed milk: Fold in the mashed durian and sweetened condensed milk until combined.

    Whip the cream: In another bowl, whip the cream until soft peaks form. A hand mixer makes this easier.
