Ingredients

- 350 g pork belly, thinly sliced
- 1/4 cup soy sauce
- 2 tbsp calamansi juice (may also use lemon or lime)
- 1 tsp sugar
- 1/4 tsp ground black pepper
- 3 garlic cloves, minced
- 1 tbsp oil, for frying
- 1 cup water
- 1 red onion, sliced into rings (may also use white or yellow onion)

In a large bowl, combine together the pork belly, soy sauce, calamansi juice, sugar, ground black pepper, and garlic. Mix well to coat the pork, and let marinate for 10 minutes.

Heat the oil in a pan over medium-high heat. Add in the marinated pork and sear on both sides until browned. Pour in the remaining marinade and water. Bring to a boil, then cover, and lower the heat to medium-low. Let simmer for 15 minutes until tender.

Add in the onions, stir to combine, and let simmer for an additional 5 to minutes to soften. Serve warm.
