  • 350 g pork belly, thinly sliced
  • 1/4 cup soy sauce
  • 2 tbsp calamansi juice (may also use lemon or lime)
  • 1 tsp sugar
  • 1/4 tsp ground black pepper
  • 3 garlic cloves, minced
  • 1 tbsp oil, for frying
  • 1 cup water
  • 1 red onion, sliced into rings (may also use white or yellow onion)

Instructions

  1. 1

In a large bowl, combine together the pork belly, soy sauce, calamansi juice, sugar, ground black pepper, and garlic. Mix well to coat the pork, and let marinate for 10 minutes.

  2. 2

Heat the oil in a pan over medium-high heat. Add in the marinated pork and sear on both sides until browned. Pour in the remaining marinade and water. Bring to a boil, then cover, and lower the heat to medium-low. Let simmer for 15 minutes until tender.

  3. 3

Add in the onions, stir to combine, and let simmer for an additional 5 to minutes to soften. Serve warm.
