Chinese pig ears salad is spicy, crispy, and tasty. It is made with boiled strips of pig ears coupled with a spicy flavorful sauce. It may not be for everyone, but it is a dish worth trying for all adventurous foodies.

Ingredients

  • 1 kg of pig ears
  • 3 slices of ginger
  • 5 g of chopped scallions
  • 4 pieces of gardenia fruit (option)
  • 1 tbsp of chopped garlic
  • 1 tbsp of bird's eye chili
  • 1 tbsp of chopped green onions
  • 1 tbsp of chili powder
  • 1 tsp of cumin powder
  • A drizzle of hot oil
  • 1 tsp of salt
  • 1 tsp of chicken bouillon
  • 1 tsp of sugar
  • 1 tbsp of light soy sauce
  • 1 tbsp of dark soy sauce
  • 1 tbsp of Chinese black vinegar
  • 1 tbsp of oyster sauce
  • 20 g of cucumber (thinly sliced)
  • 10 g of coriander
  • 50 gpeanuts
  • 20 g of onion (thinly sliced)

Instructions

    Shave off the excess hair of the ears. Use a lighter to remove hair and dirt.

    Using a small knife, scrub any remaining dirt.

    Clean and rinse very well with water.

    Then, boil the pig ears with ginger slices, chopped scallions, and gardenia fruits for 20 minutes. Cover with a lid.

    Next, transfer the pig ears to a bowl of cold water. This helps cool it down and make it firm.

    Cut into small strips and set aside.

    Prepare the sauce in a bowl. Add chopped garlic, bird's eye chili, chopped green onions, chili powder, cumin powder, and hot oil. Drizzle the hot oil over the sauce mixture, let it sizzle, and mix well.

    Afterward, mix in salt, chicken bouillon, sugar, light soy sauce, dark soy sauce, Chinese black vinegar, and oyster sauce. Stir well.

    Place the chopped pig ears in a salad bowl and pour the sauce. Mix the sauce until evenly distributed.

    Assemble with slices of cucumber, onion, coriander, and peanuts.
