Hot & Crispy Bitter Melon Salad
Start every meal with a healthy serving of salad, such as my hot and crispy bitter melon salad. It is the perfect salad for a gluten-free, vegan, and low-carb meal. Pair this dish with more bitter melon dishes like bitter melon with pork stuffing. Whether you eat it with rice or as a main meal, you can enjoy it as is.

Ingredients
- 200 g Bitter melon (thinly sliced)
- 500 ml Water
- 1 tbsp Salt
- 1 tbsp Cooking oil
- 20 g Minced garlic
- 20 g Small chili pepper (red or green)
- 10 g White sesame
- 80 g Hot oil
- 1/2 tsp Salt
- 1/2 tsp Chicken or vegetable bouillon powder
- 1 tbsp Light soy sauce
- 1 tbsp Vinegar
- 1 tbsp Sesame oil
- 30 g Onion shreds
- 20 g peanuts

Cut the bitter melon in half in the middle lengthwise and scrape off the pulp.

Then, slice the bitter melon into thin slices, about half a centimeter.

Place the bitter melon slices in a bowl of water and sprinkle a little salt.

Let them soak for 10 minutes.

In a pan, bring water to a boil and add 1 tablespoon of salt and 1 tablespoon of cooking oil.

Once it boils, add the bitter melon slices and blanch for one minute.

After one minute, rinse the blanched bitter melon slices in cold water and drain.

In a heat-resistant bowl, toss together bitter melon slices, minced garlic, small chili pepper, and white sesame seeds.

Then, pour hot oil over the ingredients for added aroma. The hot oil should sizzle as it lightly cooks the ingredients.

Next, add salt, chicken or vegetable bouillon powder, light soy sauce, vinegar, sesame oil, onion shreds, and peanuts.

Mix all the ingredients well.
