- 5 large tomatoes, quarter wedges
- 5 large eggs, beaten
- 1 tsp Chicken Essence Powder
- 1 tbsp Shaoxing Cooking Wine
- 5 cloves of Garlic, rough chopped
- 2 tbsp Vegetable Oil
- Salt to taste
- Fresh cilantro, rough chop for garnish
- Finely chopped green onions, garnish

Wash and pat dry large tomatoes. Quarter and cut into tomato wedges.

Crack 5 large eggs into a small bowl. Add one teaspoon of chicken essence powder to boost the depth of flavour. Lightly beat eggs. Do not overbeat.

Heat 2 tablespoons of oil in a large nonstick pan at medium high heat.

Once the oil is hot, add in minced garlic. Simmer until fragrant.

Add tomato to the hot pan. Allow the tomato flavor to develop for 1-2 minutes. Once the tomatoes start to blister, the tomato skin softens, and tomato juices escape, add brown sugar to balance the tangy tomatoes. Move the tomatoes around quickly.

Add a pinch of salt to taste.

Add the beaten eggs mixture directly over the tomato stir fry. Allow the eggs to slightly cook.

Push the eggs with a spatula and let the runny eggs run off onto the empty space.

Repeat and allow the eggs to gently cook and be combined with the tomato mixture. Do not overcook the eggs.

Once the eggs appear near cooked, it is time to remove them from the heat and plate. Garnish with finely chopped green onions.
