  • 3 Fresh Medium-sized Mangoes, peeled, pitted, cubed
  • 400 ml Heavy Cream or Full-Fat Coconut milk
  • 100 ml Drinking water (previously boiled or filtered water)
  • 29g Gelatin powder (2 packs) or Agar Agar Powder
  • 60g Monk Fruit Sugar

    Wash and pat dry fresh mangoes with a kitchen paper towel.

    Peel, pit, and cube about 3 very ripe mangoes with a sharp knife.

    Alternatively, if you do not want to hand chop the mango, you can also use a good-quality food processor. Here are my picks for the Best Food Processor!

    Add 2 cups of mango chunks and drinking water into a high-speed blender or food processor and blend mango flesh into mango puree.

    Run the mango pulp thru your best fine mesh sieve if you prefer a smooth puree instead of the fiber from the mango pulp. Set aside.

    Add drinking water to a large bowl, followed by sugar and gelatin powder. Mix well with a whisk to dissolve. Allow the gelling agent to bloom.

    Add heavy cream or coconut milk to the bloomed gelatin mixture. Mix well to combine.

    Add mango puree to the liquid mixture. Mix well to combine.

    Give the mango pudding mixture a quick stir.

    Pour the creamy mango mixture into a small saucepan and heat over medium-low heat. Continue to whisk and melt the gelatin powder. Do not bring it to a boil. As long as the thickening agent fully dissolves.

    Lightly grease silicone molds with vegetable oil or line pyrex glass container with plastic wrap.

    Pour the liquid into the molds. Allow the liquid to cool down before setting the whole thing in the refrigerator overnight. Alternatively, you can also pour mango mixture into individual serving bowls. It is a great way to portion and serving easier!
