- 200 g red beans
- water
- 2 l water
- 10 pandan leaves
- 1 l water
- 60 g cane sugar
- 1 g salt
Instructions
- 1
Rinse red beans thoroughly until the water is clear. Then, submerge beans in clean water and soak for at least 4 hours.
- 2
After 4 hours, discard the water and replace it with clean water. Pour red beans and water into a freezer-safe bag. Freeze beans overnight.
- 3
Before cooking the red beans, first thaw the frozen bag of beans under running water. Rinse and strain defrosted red beans.
- 4
In a pot, add red beans, water and knotted pandan leaves. Cook over medium to high heat. Once it starts boiling, reduce the heat to low. Simmer for at least 2 hours, leaving the lid slightly open. Stir every now and then to avoid burning.
- 5
After 2 hours, the liquid should have reduced. With the back of a ladle, mash the softened red beans. Leave some red beans unmashed, if you prefer.
- 6
Once most of the red beans are mashed, add water. Add cane sugar and a pinch of salt. Let it boil for another 1 hour on low heat before serving.
