Lao Khao Lam
Khao lam is a traditional Lao dessert. It is sticky rice soaked in sweet coconut milk and swirled with fresh durian. You can either bake it or grill it!

Ingredients
Quantities are shown as originally provided.
- 2 cups Lao sticky rice (soak for 1 hour in warm water)
- 6 eight inch bamboo
- 1 cup coconut milk
- 1-1/2 cup durian
- 1/4 cup palm sugar
- ¼ cup water
- 1/4 cup granulated sugar
- 1 large pinch salt

Rinse sticky rice 3x then let it soak in warm water for at least 2 hour

Carefully remove out husk of bamboo

In a saucepan, add palm sugar and melt then add coconut milk and cook on low followed with sugar and salt then mix until melted

In a large pan, add the strained stick rice, sweetened coconut milk mixture and then cook on medium for 3-5 minutes until most of the liquid is absorbed.

Cut up the pod of durian and mix it into the rice

Grab a bamboo and carefully stuff it with the rice leaving 2 inches on the top empty; roll two banana leaves together the use it to stuff the top of the bamboo; grab tin foil and folld it around the bamboo for extra closure

Heat the oven to 400F and let it cook for 1 hour.
