Ingredients

- 2 large cucumbers, (peeled and diced)
- 2 cups diced Roma tomatoes
- 1 cup diced red onions
- ⅔ cup chopped cilantro
- 2 jalapeño peppers (diced)
- 2 cloves garlic, (grated or minced)
- 6 tablespoons lime juice ((about 2 large limes))
- 1 tablespoon olive oil
- Kosher salt, (to taste)
- Freshly ground black pepper, (to taste)

Combine the cucumbers, tomatoes, onions, cilantro, jalapeños, garlic, lime juice, olive oil, salt, and black pepper in a large bowl. Toss together to coat, taste, and season with more salt and black pepper as needed.

Cover and refrigerate for 30 minutes to let all the flavors meld together.
