Easy & Quick Spicy Vegetable Lo Mein

Ingredients

- 14 oz thick egg noodles (ideally pre-cooked kind or sub with frozen udon noodles)
- 2 cups gai-lan ((aka Chinese Broccoli) chopped into 1 inch pieces)
- 1 cup red bell pepper (julienned)
- 1/2 cup carrot (julienned)
- 1/2 cup onion (julienned)
- 3 cloves garlic (minced)
- 1/2 tbsp vegetable oil (or any neutral oil)
- 1/2 tsp sesame seeds (garnish)
- 2 tbsp oyster sauce (or vegetarian stir fry sauce)
- 2 tbsp dark soy sauce
- 2 tsp regular soy sauce
- 2 tbsp water (cold)
- 3/4 - 1.5 tbsp chilli garlic sauce ((3/4 tbsp = mild, 1.5 tbsp = spicy or add more))
- 2 tsp sesame oil
- 1 tsp cornstarch (or potato starch)
- 1 tsp white granulated sugar

In a large bowl, soak noodles in hot boiling water for 30 seconds just until loosened. Then strain immediately and set aside.

In a small bowl, combine noodle sauce ingredients and set aside.

Heat a large pan on medium heat. As it heats, add vegetable oil, minced garlic, and white onions. Allow this to fry until onions have softened and become translucent.

Add all the remaining vegetables and stir fry for 30 seconds.

Next add pre-cooked egg noodles and noodle sauce. Toss everything together. Remove off heat and garnish with sesame seeds.
