This Chinese Chicken Mushrooms Stir Fry is a quick and tasty dish you can whip up in under 30 minutes! Juicy chicken is marinated, stir fried with mushrooms, and finished with scallions for a savory, satisfying meal. I love using chicken thighs for extra flavor, but chicken breast works great too (just marinate a bit longer for tenderness).

Ingredients

  • Chicken Marinade:
  • 1 lb chicken thigh, bite-sized pieces (or chicken breast, sliced)
  • 1 tsp cornstarch
  • ¼ cup light soy sauce
  • 1 tsp sesame oil
  • 1 tbsp rice wine vinegar
  • 2 tsp honey
  • 3 garlic cloves, minced
  • Rest of Stir Fry:
  • 2 tbsp vegetable oil, separated
  • 8 oz mushrooms, sliced to smaller pieces as needed
  • 1 tbsp oyster sauce
  • 2 scallions, cut in 1-inch slices
  • Salt, to taste
  • (Optional) dried red peppers for heat

Instructions

    Marinate Chicken: In a mixing bowl, combine chicken with cornstarch, soy sauce, sesame oil, rice wine vinegar, honey, and minced garlic. Mix well and marinate at least 15 minutes (up to overnight in the fridge).

    Cook Chicken: Heat 1 tbsp vegetable oil in a wok or large pan over medium-high heat. Stir fry chicken until lightly browned (about 2–3 minutes). Remove and set aside.

    Cook Mushrooms: Add remaining oil if needed, then stir fry mushrooms for about 3 minutes until they start to soften.

    Combine & Finish: Return chicken to the pan, add oyster sauce, scallions, and optional dried red peppers. Stir fry 1–2 minutes until chicken is cooked through and mushrooms are tender. Season with salt to taste.
