Spicy Pork Adobo

Here's an extremely simple, inexpensive and totally delicious Filipino based spicy pork adobo recipe. This can also be made with chicken, beef or seafood

Ingredients

Quantities are shown as originally provided.

  • 2 pounds of pork belly cut into 1 inch cubes
  • 1 red onion sliced
  • 5 cloves of garlic minced
  • 4 pieces of bay leaves
  • 1 tsp black pepper corns
  • 2-3 whole habanero peppers (or any type of hot pepper you choose)
  • 1/4 cup rice vinegar
  • 1/2 cup soy sauce
  • 2 cups water
  • 1 tsp salt

Instructions

    In a hot pot on medium heat, toss in pork pieces and stir continuously for 10 minutes until the fat from the meat begins to render (if using a lean cut of meat add about 2 tbsp of oil before adding in the meat).

    Once the meat begins to brown and some of the fat begins to render, add in onions and salt and continue stirring for another 5 minutes until the onions begin to wilt.

    Add in garlic, bay leaves, black pepper corns, peppers, rice vinegar, and soy sauce, then simmer on high heat for 5 miuntes.

    Add water and continue to cook on low heat for 20 minutes, or until sauce thickens and reduces to about half.

    Taste for seasoning, and serve hot.
