Easy Kaju Katli
Kaju Katli, a traditional Indian dessert that uses cashew flour and ghee to make a soft, tasty fudge like treat. With a long shelf life, you can enjoy kaju katli for quite a while, at least if you and your family don’t devour it first! Chances are good, once you make it, you will need to make a new batch soon after!

Ingredients
Quantities are shown as originally provided.
- sugar ¾ cup
- water ¼ cup
- ghee 1 tbsp
- ground cashew flour or almond flour 2 cups
- Edible silver leaves.

First, add the sugar and water to the inner pot and mix well.

Next, close the lid, seal the vent and pressure cook for 10 minutes at high pressure followed. Once it is done, do a quick release of pressure.

When the pressure is released, open the lid of the Instant Pot and then add ghee and almond or cashew flour. Once added, stir the ingredients together until it forms a thick paste and starts leaving the sides. If it still looks runny saute for an additional 2 minutes.

After 2 minutes, pour or scoop out the thick paste from the pot onto a silicone mat or greased thali.

Using a spatula, spread it evenly until it is about ¼ of an inch thick.

Next, place parchment paper on the dough and roll with a rolling dough to make it even.

Once even, garnish with a spread of edible silver leaves covering the entire area.

Finally, give it about 10 minutes to set and use a pizza cutter or knife to cut the fudge into diamond shaped pieces.
