  • 7 oz Shredded Pork Skin
  • 1 tbsp Kosher Salt, For Cleaning Pork Skin
  • 1 tbsp White Vinegar, For Cleaning Pork Skin
  • 1/2 lb Pork Chops
  • 1/2 tbsp Fish Sauce
  • 1/2 tsp Sugar
  • 1/2 tsp MSG
  • 1/2 tsp Garlic Powder
  • 1/4 tsp White Pepper
  • 1 tbsp Oil
  • 5 Garlic Cloves, Minced
  • 2 tbsp Roasted Rice Powder (see instructions below)
  • 1/2 tbsp Fish Sauce
  • 1/4 tsp Black Pepper

Instructions

    Pork Chops:

    Combine the pork chops in a bowl with fish sauce, sugar, MSG, white pepper, and oil. Mix well to coat evenly. Let the pork chops marinate for 10-15 minutes

    Heat oil in a skillet over medium-high heat and sear pork chops on both sides until cooked through, about 2–4 minutes per side, depending on the size and thickness of the pork

    Let the pork chops cool down for 5 minutes before slicing into thin strips, roughly the same thickness as the shredded pork skin

    Prep the Pork Skin

    Thaw frozen shredded pork skin, then rinse and scrub thoroughly with water, kosher salt, and vinegar. Repeat 2–3 times to remove impurities and reduce any strong porky odor. Drain, rinse with cold water, and squeeze out excess moisture

    Let the pork skin dry completely—use a salad spinner if you want to speed this up then set aside

    Make the Roasted Rice Powder :

    In a dry sauté pan over medium-high heat, toast 2-3 tablespoons of glutinous sticky rice for 3–5 minutes. Stir constantly to prevent burning; the rice should turn a deep golden brown. Let cool slightly

    Grind the toasted rice in a spice grinder or food processor until it becomes a fine powder

    Put it all together and serve:

    Combine sliced pork chop, shredded pork skin, minced garlic, and toasted rice powder in a large mixing bowl. Season to taste with fish sauce and black pepper. Toss gently until everything is evenly coated

    Serve simply over rice or as a part of a broken rice plate. Enjoy!
