Devilled sausages(spicy sausasges)

A Sri Lankan devilled sausage recipe. A quick and easy sausage recipe you can even cook right now if you have a frozen pack of sausages in your refrigerator. This one-pot sausage fry only takes 30 minutes to make and will not disappoint you with the flavors.

Ingredients

  • The ingredients mentioned below use standard measuring cups and spoons.
  • Water as needed
  • 500 g pack of frozen chicken sausages(you can also use beef sausages)
  • 3 tbsp oil
  • 1 tsp minced ginger(1″piece minced)
  • 2 tbsp minced garlic(about 3 cloves)
  • 2 medium-sized onions cut into wedges
  • 250 g banana peppers also known as capsicum(substitute with bell peppers)
  • 4 green chilies sliced in two(reduce if you need to reduce spice or remove completely)
  • 2 medium-sized tomatoes cut into thick wedges
  • 1-2 tsp red chili flakes(increase or reduce as per your need).
  • 1 tsp curry powder(any regular curry powder will do)
  • 1/2 tsp turmeric powder
  • 3 tbsp soy sauce(you can use sweet soy sauce as well. if you are using a smaller pack of sausage reduce the soy sauce to 1 and 1/2 tablespoon).
  • 1/4 cup tomato ketchup also known as tomato sauce(not tomato paste, can substitute with hoisin sauce as well ).
  • 1 tbsp sugar
  • Salt to season(please keep in mind soy sauce has high sodium levels unless you choose a low sodium variety, so make sure you use salt carefully to season this spicy sausage curry).
  • 1 tbsp black pepper(reduce to 1 teaspoon if needed).
  • 1/4 cup coconut milk or even water(optional, only used if you want to stretch the stir-fry for a larger family by making extra sauce).

Instructions

    Cut the onions, capsicum, tomatoes, green chilies as well as other ingredients needed to make the devilled sausages.

    Defrost frozen chicken sausages(500g, can use beef sausage as well)by submerging the pack in lukewarm water.

    Once defrosted, cook the sausages in a pan of boiling water for 3-5 minutes.

    Drain and set aside to cool.

    Cut the boiled sausages into 1-inch or slightly larger pieces.

    Place a wok or large frying over medium fire.

    Pour in the oil(3 tbsp oil)and add the ginger(1 tsp, 1″ piece minced), followed by garlic(2 tbsp, 3 cloves minced).Cook for 2 minutes.

    Add the onions( 2medium, cut into wedges), capsicums(250g, substitute with bell peppers), and green chilies(4, reduce if you need to reduce spice or remove completely.

    Continue to cook the ingredients until capsicums become slightly soft.

    Reduce heat to low medium, add the tomatoes(2 medium, cut into wedges), chilies flakes(1-2 tsp), turmeric(1/2 a tsp), curry powder(1 tsp), soy sauce(3 tbsp of soy sauce, you can use sweet soy sauce as well. if you are using a smaller pack of sausage reduce the soy sauce to 1 and 1/2 tablespoon).

    Tomato sauce(1/4 cup, not tomato paste, you can also substitute with 3 tablespoons of hoisin sauce)to the pan.

    Cook for 2-3 minutes, check for seasoning(keep in mind soy sauce is salty as well), and season with salt.

    Add sugar(1 tbsp)and continue to cook.

    Stir the ingredient for a minute or two.

    Then add the sausage slices to the wok and combine all ingredients together for  3 minutes.

    Add the black pepper(1 tbsp) just before your remove the sausage stir-fry from the stove and combine

    Taste and season as per your need(mainly, salt or a little more sweetness by adding more sugar).

    Transfer to a bowl.

    Don’t wash away the leftover sauce once you transfer the sausage fry to a bowl.

    Add coconut milk or water, cook it over a stovetop until you have a thick sauce of 1/2 cup, and mix with the cooked spicy sausage stir-fry.
