Rose Dry Fruit Chikki / Dry Fruit Brittles

Ingredients
Quantities are shown as originally provided.
- 1 cup Raw Sugar (1 cup is 250 ml measurement)
- 1/2 cup Chopped Almonds or Badam
- 1/2 cup Chopped Cashew or Kaju
- 1/4 cup Chopped Pistachios or Pista
- 1/4 cup Edible Rose petals + 1 tbsp Extra
- Few Drops of Ghee or Clarified butter

Roughly chop Dry fruits and keep aside.

Grease kitchen counter with few drops of ghee or oil.

Heat a non stick pan and add sugar.

Reduce the heat and allow the sugar to slowly melt. It takes about 3-5 minutes on low heat.

Keep stirring the mixture until the sugar dissolves completely. Do not leave it unattended else it will burn and you will have to start again

Take it off heat and add the dry fruits and rose petals. Now place the pan over the flame and mix it well.

Pour this mixture immediately over the greased kitchen counter and spread it evenly with a pallete knife.

You have to work very fast during the above process so that the sugar doesn't set and you get the desired thickness of the chikki or brittle.

Sprinkle the rose petals on top, press it with pallette knife and / or a rolling pin too (as shown in pic below) and cut the warm mixture into squares

Now allow the mixture to cool completely and the chikki will come off easily with a knife.

Store in an air tight container for a week or more.
