  • 1 lb Ground Pork
  • 2 cups Cooked Rice
  • 1 small Shallot
  • 1 tbsp Minced Garlic
  • 2 tbsp Fish Sauce
  • 2 Thai Chili
  • Black Pepper
  • 3 tbsp Sugar
  • Cucumbers
  • Butter
  • Green Onions
  • Thai Chili
  • Black Pepper

    Prep:

    Mince shallot and garlic. Chop green onions and Thai Chilis. Slice cucumbers

    Nuoc Mau/Caramel:

    Make the nuoc mau (Vietnamese caramel) by adding sugar to a pan on medium-low heat. Slowly melt the sugar while occasionally stirring, until the sugar is fully dissolved and the color turns a dark amber color – about 5-6 minutes

    Cook:

    Turn the heat up to medium-high, add ground pork, and brown it off. Using a spatula, break up the ground pork, ensuring there are no large clumps

    Add minced shallots, garlic, and Thai chilis. Sauté for 1 minute and then season with fish sauce. Mix well and let the pork cook without moving it so that it can caramelize and develop a little crust on the bottom of the pan

    Add black pepper, and make any final adjustments to the seasonings

    Add white rice to a bowl, then add a knob of butter to the center and top with the caramelized ground pork. Garnish with green onions, Thai chili, and fresh ground black pepper. Serve with cucumbers, and enjoy!
