- 500 gram chicken pieces thighs or breasts, cut into bite-sized chunks
- 1 punnet cherry tomatoes
- 3-4 spring onions sliced into 2-3cm pieces
- 2 tablespoons miso paste
- 1 tablespoon honey
- 100 ml cream
- 3 tablespoons soy sauce
- 3 tablespoons sake
- 3 cloves garlic minced

Combine the soy sauce, sake, and minced garlic to form a marinade. In a bowl add the chicken pieces, and add enough marinade to coat the chicken and toss. Leave the chicken to marinate for 20-30 minutes.

Heat a large pan or wok over medium-high heat. Add the marinated chicken, reserving the marinade for later. Stir-fry the chicken for 5-6 minutes until browned and cooked through. Remove from the pan and set aside.

In the same pan, add the cherry tomatoes and spring onions. Stir-fry for 2-3 minutes until the tomatoes soften and release some of their juices.

Lower the heat to medium. Add the miso paste, honey, and the leftover marinade juice to the pan. Stir well until the miso dissolves.

Slowly pour in the cream, stirring constantly to create a smooth sauce. Let it simmer for 1-2 minutes until the sauce thickens slightly.

Return the cooked chicken to the pan and toss everything together to coat the chicken in the creamy miso sauce. Cook for another minute to heat through.
