- 2 lbs Russet potatoes (about 5-6 small potatoes)
- 1 tbsp cooking oil (I used avocado oil)
- 1 tsp garlic powder
- 1 tsp onion powder
- ¼ tsp paprika
- ⅔ cup shredded Parmesan cheese
- Salt and pepper (to taste)

Scrub potatoes clean and dry thoroughly. Cut in half lengthwise, then cut each half lengthwise again. Slice in half from the pointed end to create 8 wedges from each potato.

Preheat air fryer to 400°F. If your air fryer doesn't have a preheat function, simply turn on and let warm up for 2-3 minutes.

Meanwhile, to a large bowl, add potato wedges, oil, garlic powder, onion powder, paprika, 1½ tsp salt, and ½ tsp pepper. Mix vigorously until each wedge is evenly coated. Stir in cheese and mix well.

Add a single layer of potato wedges to the air fryer, leaving space between each one - you may need to cook in batches. Then air fry for 8-12 minutes or until golden brown. Shake 1-2 times for an even cook. Transfer to a wire rack to let cool and lightly season with salt. Repeat, if needed.
