Ingredients

- 200 g beef rump steak (any cut of your choice)
- 1 pack frozen udon
- 2-3 scallions, chopped in long pieces
- 1/2 white onion
- 1 handful bean sprouts
- a drizzle of sesame oil
- 1 tbsp light soy sauce
- 1 tbsp Shaoxing cooking wine
- 2 tsp dark soy sauce
- 1 tsp cornstarch
- 1/2 tsp white pepper powder
- 1/2 tsp sugar
- 1 tbsp water
- 1/8 tsp baking soda
- 1 tbsp soy sauce
- 1 tbsp dark soy sauce

Cut beef into thin slices and marinate for 20 minutes.

While waiting for beef to marinate, prepare the rest of the ingredients by chopping onions and scallions.

Cook frozen udon according to package instructions, drain and set aside.

Heat some cooking oil in pan/ wok. On high-heat, cook the beef for about a minute until browned, then remove from pan and set aside.

Add some more cooking oil to the pan and stir-fry the onions for 30 seconds. Then throw in beansprouts, scallions, noodles and stir-fry sauce. Cook for about a minute before adding the beef back in. Combine everything together, remove from heat, drizzle some sesame oil and enjoy!
