Paleo Condensed Milk

- 14 oz. (1 can) light coconut milk
- 4 medjool dates (pitted (see notes))
- ⅛ tsp vanilla bean powder (optional)

Use your hands to open and roughly break the pitted dates in half. Toss them in a small work bowl (4-cup mini food processor) until they are in small fruit chunks. You might need to scrape the bowl and pulse a few times. Alternatively dice them into small bites.

Add the dates to a medium size saucepan with 14 oz. canned light coconut milk. Bring it to a gentle boil, stir-often. Pay attention to the stovetop temperature. After it reaches a gentle boil, lower the heat and slow simmer the milk liquid and stir with a wooden spoon frequently to prevent it from spilling until the milk is evaporated almost by ⅓ of the original quantity (about 15-20 mins).

Strain the milk and dates through a sieve into a heatproof glass jar and discard any fruit chunks. Allow the milk to cool before storing it in the fridge. Stir with a spoon before using. The milk will be runny at first but will thicken as it chills. To make it runny, simply heat it up. Best finish in 1 week.
