Ingredients

Quantities are shown as originally provided.

  • 6 Vietnamese Baguettes
  • 2 Egg Yolks
  • 1/3 cup Canola Oil
  • 1/2 tsp Salt
  • 1 Large Carrots
  • 1 Large Daikon
  • 3 tbsp Kosher Salt
  • 1 cup Filtered Water
  • 1 cup Sugar
  • 1 cup Vinegar
  • 4 lbs Thinly Sliced Pork Shoulder
  • Skewers
  • 2 Stalks Lemongrass
  • 2 tbsp Minced Shallots
  • 2 tbsp Minced Garlic
  • 4 tbsp Oyster Sauce
  • 2 tbsp Soy Sauce
  • 1 tbsp Fish Sauce
  • 2 tbsp Honey
  • 2 tbsp Brown Sugar
  • 2 tbsp Oil
  • 2 tbsp Sesame Seeds
  • Salt and Pepper
  • Cilantro
  • Cucumber
  • Jalapeno
  • Maggi Seasoning
  • Black Pepper

Instructions

    Vietnamese Butter:

    Separate egg yolks from white, and add to mixing bowl or container. Whisk until smooth

    Slowly drizzle in oil, and continue to whisk until it becomes a mayo-like consistency

    Season with salt

    Pickled Carrots and Daikon:

    Peel and cut veggies into matchstick pieces. Then add to a mixing bowl, sprinkle kosher salt, and mix. Let the veggies sweat for 15 minutes, then rinse them off with cold water

    In a small pot, add equal parts water, sugar, and vinegar. Bring up to a slight boil, ensuring the sugar has fully dissolved. Let cool completely

    Add veggies and pickling liquid to a sanitized mason jar. Let that sit in the fridge for at least an hour. The đồ chua is good in the fridge for 3-4 weeks

    Grilled Pork Skewers:

    Thinly slice pork shoulder, then marinate with lemongrass, shallots, garlic, oyster sauce, soy sauce, fish sauce, honey, brown sugar, oil, sesame seeds, salt and pepper. Marinate overnight or at least one hour

    Soak skewers in water for half an hour. Skewer pork in even layer, without any loose pieces dangling

    Grill pork skewers on medium heat for 7-8 minutes on each side or until pork reaches desired doneness

    Assemble:

    Cut Vietnamese Baguette, lengthwise and slather with homemade Vietnamese butter. Remove pork from skewers and add to sandwich. Top with all you favorite herbs, and veggies including pickled carrots and daikon. Finish with a splash of Maggi seasoning and black pepper
