Ingredients

  • 2 fillets fresh salmon
  • pinch sea salt
  • pinch lemon pepper seasoning
  • 2 cups fresh arugula
  • 1/2 red onion
  • 8 cherry tomatoes
  • pinch sea salt
  • pinch black pepper
  • 1 tbsp extra virgin olive oil
  • 2 tbsp extra virgin olive oil
  • slices of lemon

Instructions

    Grab 2 plates and add a handful of fresh arugula to each one, thinly slice 1/2 of a red onion and evenly divide on top of the arugula, cut 8 cherry tomatoes in half and evenly divide on top of the salad, season the salad with sea salt & freshly cracked black pepper and set aside

    Season 2 fresh fillets of salmon (mine where 1-inch thick) with sea salt and a generous portion of lemon pepper seasoning, compact the seasonings with your hands so they stick to the salmon

    Heat a fry pan with a medium-high heat and add 2 tablespoons of extra virgin olive oil, after 2 minutes add the fillets of salmon seasoned side down, using a spatula push down on each fillet for about 30 seconds, this will help give the salmon that beautiful sear, after 3 minutes flip the salmon fillets to cook the other side, after a total cooking time of 6 minutes remove the salmon from the heat and add 1 fillet to each plate with the salad, garnish with a couple slices of lemon and add a kiss of extra virgin olive oil to the salad, enjoy!
