- 1/2 cup coconut oil
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1 tablespoon ground flax seed
- 3 tablespoons water
- 1 1/4 cups whole wheat flour
- 3/4 cup quick oats
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup mini chocolate chips

Preheat the oven to 400°F (204°C). Line two baking sheets with parchment paper and set aside.

In a large mixing bowl, use a hand mixer to beat 1/2 cup coconut oil, 1/4 cup brown sugar, and 1 teaspoon vanilla extract until smooth and creamy.

Add 1 tablespoon ground flax seed and 3 tablespoons water. Beat until fully combined and slightly thickened.

Add 1 1/4 cups whole wheat flour, 3/4 cup quick oats, 1/4 teaspoon salt, and 1/2 teaspoon baking soda. Stir until well combined. Fold in 1/2 cup mini chocolate chips. The dough will be crumbly but should hold together when pressed.

Roll dough into teaspoon-sized balls and place on the prepared baking sheets, leaving a small amount of space between each cookie. These cookies will spread very little.

Bake one sheet at a time for 7 to 10 minutes, or until the cookies are lightly golden around the edges.

Remove from the oven and transfer cookies to wire racks. Allow to cool completely before storing. Serve with milk or eat plain.
