Fishball Sauce

Ingredients
Quantities are shown as originally provided.
- 2 cups water
- 2 tbsp soy sauce
- 4-6 tbsp brown sugar (more or less, to taste)
- 3 cloves garlic, minced
- 2 tbsp shallots, minced
- 1/2 tsp vinegar
- 1/4 tsp salt, to taste
- 1/4 tsp ground black pepper, to taste
- 1.5 tbsp cornstarch (dissolved in 2 tbsp cold water)

In a sauce pot, combine together the water, soy sauce, brown sugar, garlic, shallots, vinegar, salt, and pepper. Stir to combine.

Bring the mixture to a boil, then let simmer for 10 minutes.

After 10 minutes, pour in the cornstarch-water mixture and stir quickly to avoid clumps. Bring this to a low boil and continue to heat the sauce until thickened to your desired consistency. Taste the sauce, and season to taste with more salt, pepper, or sugar, if desired.

Transfer to a separate bowl or container, let cool completely prior to serving.
