Ingredients

  • 1 ½ cups Sela basmati rice
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 Yellow onion (medium)
  • 1 Dry bay leaf (finely diced)
  • 6 Cardamom pods
  • ¼ teaspoon Saffron threads
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 cup Chicken broth
  • 2 cups Hot water

Instructions

    Wash the rice a few times in cold water until the water runs clear.

    Let it soak in room temperature water for 20 minutes before draining.

    Add the saffron to a mortar and pestle and grind until powdery.

    Add 3 tablespoons of hot water and mix well. Let this sit.

    To a pot, add the olive oil and butter.

    On medium heat, add the chopped onion, cardamom pods, and bay leaf. Saute until the onion is translucent for about 8-10 minutes and stir often.

    Add the drained rice and the seasonings.

    Add in the bloomed saffron and mix well.

    Add the hot water and broth and mix.

    Let it come to a rolling boil on high heat for 5 minutes,

    Cover and reduce the heat to low for 20 minutes.
