Cinnamon Candied Almonds

Ingredients
Quantities are shown as originally provided.
- 1/2 cup (110g) packed light-brown sugar
- 1/2 cup (100g) granulated sugar
- 2 1/2 tsp Siagon cinnamon
- 3/4 tsp fine sea salt
- 4 cups (600g) Fisher Whole Almonds
- 1 large egg white
- 2 tsp water
- 2 tsp vanilla extract

Preheat oven to 250 degrees Fahrenheit. Line a rimmed 18 by 13-inch baking sheet with parchment paper or a silicone baking mat.

In a medium mixing bowl whisk together brown sugar, granulated sugar, cinnamon and salt, set aside.

Place almonds in a large mixing bowl.

In a separate small mixing bowl whisk egg white, water and vanilla until frothy. Pour over almonds in mixing bowl and toss to evenly coat.

Add sugar mixture to almonds and toss to evenly coat. Spread into an even layer on prepared baking sheet.

Bake in preheated oven, tossing every 15 minutes (three times throughout baking), for 60 minutes total.

Let cool then store in an airtight container for up to one week.
