Ingredients

4
  • 4 boneless, skinless chicken breasts, roughly the same size (about 1 1/2 pounds total)
  • Salt and pepper, to taste
  • 1/2 cup barbecue sauce
  • 4 oz smoked gouda cheese, shredded
  • 2 green onions, thinly sliced, optional

Instructions

  1. 1

Line a baking sheet with parchment paper.

  2. 2

Pound the chicken breasts to an even thickness, about 1/3 inch. Place in a single layer on the prepared baking sheet and season all over with salt and pepper. Cover each chicken breast with barbecue sauce, then top with the shredded cheese.

  3. 3

Bake until the internal temperature reaches 160°F, 8 to 10 minutes, then cover with foil and rest for 5 minutes, ensuring that the temperature rises to 165°F before serving. Garnish with green onions and serve. Refrigerate leftovers in an airtight container for up to 4 days. Reheat in a 350°F oven until heated through, or reheat individual servings in a microwave Love the recipe? Leave us stars and a comment below!
