Oven Roasted Purple Sweet Potatoes

Ingredients
Quantities are shown as originally provided.
- 2 purple sweet potatoes (I used Stokes purple sweet potatoes)
- 3 teaspoons powdered coriander
- 1/2 teaspoon powdered turmeric
- 1 teaspoon powdered smoked paprika
- 1 teaspoon pepper flakes
- 3 tablespoons grapeseed oil
- Salt and pepper to taste
- OPTIONAL: chopped fresh parsley to garnish.

Preheat the oven to 425 degrees

Wash and peel the purple sweet potatoes.

Then cut them up into bite-sized pieces.

Add the oil, coriander, turmeric, smoked paprika, and chili flakes to a bowl and mix well.

Then, add the cut-up purple sweet potato to this dish and toss well.

Place the spiced purple sweet potatoes on a silpat-lined baking tray (or foil-lined baking tray).

Bake at 425 degrees Fahrenheit (218 degrees Celsius) for 20 minutes.

Remove from oven and season with salt and pepper to taste.
