Ingredients

  • 2 lbs chicken wings
  • 1 tbsp chicken bouillon
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tbsp oil
  • Salt and pepper
  • 3 tbsp sugar
  • 1 small shallot
  • 1 tbsp garlic
  • 2 inch knob ginger
  • 3 tbsp fish sauce
  • 1 cup water
  • Salt and pepper
  • Green onion
  • Black pepper

Instructions

    For the marinade, add chicken bouillon, fish sauce, sugar, oil, salt, and pepper to a mixing bowl and combine. Add in chicken wings and let that marinate in the fridge for at least half an hour

    Then, to make our nước màu or caramel, we'll add three tablespoons of sugar to a pot, heating it on medium-low, constantly stirring until it turns a dark amber color

    Add marinated chicken wings to the pot and brown off for a few minutes

    Then we'll add in minced shallots, garlic, and ginger that we cut up into matchstick pieces

    Season with fish sauce, salt, and pepper; add just enough water to cover the chicken. Bring up to a boil, and let that simmer covered for half an hour

    Add more ginger and adjust the seasoning to taste. Serve with rice and garnish with green onions and black pepper
