- 4 tablespoons fresh coriander leaves finely chopped
- 6 tablespoons fish sauce
- 4 red chilies thinly sliced
- 2 tablespoons lemon juice
- 1 small onion cut into rings
- 200 gram beef rump steak thinly shredded
- 1 packet rice noodles
- 2 bok choy cut into quarters lengthways
- 4 tablespoons fresh mint finely chopped
- 1 lemon cut into quarters
- 8 cup beef stock

Soak the rice noodles in warm water for about 30 minutes until soft. Drain and keep warm.

Soak the sliced onion rings in lemon juice and let stand for 30 minutes.

In a large saucepan, bring the beef stock to a boil.

Drop the bok choy into the stock and cook for one minute, then remove.

In four large bowls, place a quarter of the mint, bok choy, and lemon wedges into each.

Add a quarter of the noodles, fish sauce, chilies, onions, and herbs to each bowl.
