Ingredients
Quantities are shown as originally provided.
- 3 pork chops
- 2 onions
- 1 tomato, optional
- 2 tbsp shao hsing rice wine
- 1 tbsp soy sauce
- 1 tsp white pepper
- 1/2 tsp salt
- 2 tsp sugar
- 1 tbsp oil
- 1/2 cup ketchup
- 4 tbsp worcestershire sauce
- 2 tbsp soy sauce
- 1 tbsp chicken stock concentrate, optional
- 1 tbsp rice vinegar
- 1 tsp salt
- 1 tbsp sugar
- 4 cups water

Tenderize pork chops by pounding.

Mix with all ingredients of marinade, cover and let rest in fridge for at least one hour or overnight.

Peel and slice onions to 1/4 inch rings. If using tomato, slice to bite sized wedges.

Add 1 tbsp oil to hot pan, add in pork chops and fry over med high heat until golden brown on each side. Remove chops from pan.

If not enough oil left in pan add extra tbsp of oil, then add in sliced onions and stir fry over med low to low heat until onions start to caramelize, turn brown and get soft.

Add pork chops, tomato and all the sauce ingredients into pan and simmer for 10-15 mins. The sauce should be thick and clingy, if not, remove pork chops and cook down sauce.

Taste test the sauce, making sure the sweet and sour is balanced.

Scoop hot white rice onto plates in nice mounds. Place one pork chop (you can slice first if you like) on each mound of rice, cover with a heap of onions and then pour a good amount of the sweet and sour sauce over all.
