Ingredients

  • 3 tablespoons Olive Oil
  • 2 Onions
  • 4 cloves Garlic
  • 1- inch piece Fresh Ginger
  • 3 Boneless Skinless Chicken Breasts
  • 4 teaspoons Ground Coriander
  • 1 teaspoon Ground Turmeric
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Smoked Paprika
  • 1 14.5 ounce can Diced Tomatoes or RO*TEL tomatoes
  • 1/4 cup Water
  • Fresh Parsley (for garnish)

Instructions

    Peel and chop onions and add chopped onions and olive oil to a pan over medium heat.

    Let onions cook 15 minutes or so, stirring occasionally.

    While onions are cooking, peel and chop garlic. Also peel and grate ginger and add garlic and ginger to onion mix and let cook 2 minutes.

    Cut up the chicken breasts, push the onion mix to the side of the pan and add the chicken into it. Turn the heat up and add in the chicken pieces.

    Sprinkle in the coriander, cumin, turmeric, chili powder, smoked paprika, water and diced tomatoes and cook for 10-12 minutes, stirring often.

    Remove from heat, garnish with chopped parsley and enjoy with rice, quinoa or roti.
