Baked Brie with Apple, Walnut, and Caraway

Ingredients
- 215 g brie ((7.5 oz))
- 150 g sweet/tart apple ((~1 cup) diced (see note))
- 1.5 tbsp honey (plus a little to drizzle)
- 2 tsp lemon juice
- 1/2 cup walnut pieces
- 1/4 tsp caraway seeds (ground)
- a pinch lemon zest
- 1.5 tbsp butter
- a pinch salt

Preheat oven to 350° F (175° C).

Cover the surface of the brie with a little honey (1-2 tsp). Place the wheel of brie on a tray with a piece of parchment paper. Bake for 5-7 minutes, until very soft but not melting/falling apart.

Finely dice the apples, toss them with the lemon juice and remaining honey. Set aside.

In a medium-size skillet, melt the butter over medium heat. Add the apple/honey mixture and saute for 2 minutes. Add walnuts, lemon zest, caraway and salt. Cook for 4-5 more minutes, stirring regularly to avoid scorching the honey. The mixture is done when it has become thick/sticky and reached a caramel colour.

Remove the brie from the oven, top with apple/walnut mixture, drizzle a little extra honey over the top, serve immediately with crackers, bread, apple slices, etc.
