  • 1 cup watermelon rind (outer skin peeled, pink flesh removed and chopped bite size)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon rice vinegar
  • 1/2 teaspoon soy sauce

Instructions

    Put kosher salt, rice vinegar and soy sauce in a bowl and stir until salt has dissolved.

    Put watermelon rind pieces in a ziploc bag and add pickling sauce. Push out most of the air from the ziploc bag and seal. Massage the watermelon rinds to ensure the sauce covers each piece evenly.

    Marinade for 10 minutes if you want mild pickled watermelon rind pieces and 15 minutes for a spicier pickled watermelon rind flavor.
