- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 2 tbsp taco seasoning
- 1/3 cup water
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 small can (4 oz) diced green chiles
- 1 can (15 oz) black beans, drained and rinsed
- 8 small corn tortillas
- 2 cups shredded cheese (Mexican blend or Jack and Cheddar)
- 2 medium tomatoes, diced
- 3 green onions, chopped
- Sour cream for garnish

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish lightly to prevent sticking.

In a frying pan over moderate heat, put the ground meat to brown.

Drain the excess fat off. Put the onion and garlic in the dish and cook until soft and fragrant.

Then, mix in the taco seasoning and water and let it simmer for, say, 2 minutes. At the end, mix everything with the diced tomatoes, green chilies, and black beans.

Spread a thin layer of the beef mixture on the bottom of the casserole dish.
