- 1 stick butter
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1 teaspoon vanilla
- 2 cups all purpose einkorn flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup dark chocolate chips

Preheat the oven to 375 degree.

In a mixer, cream together butter and sugar.

Add in egg and vanilla. Mix until well combined.

In a separate bowl, mix together dry ingredients and add to the wet ingredients.

Mix together until just incorporated.

Fold in chocolate chips and toasted coconut.

Spoon cookies onto a parchment lined cookie sheet and bake for 10-12 minutes or until the edges start to turn golden brown.
