  • 1 stick unsalted butter (room temperature)
  • 2/3 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg (room temperature)
  • 1 2/3 cup old fashioned oatmeal
  • 1/2 cup all purpose flour
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 2/3 cup chopped walnut

Instructions

    Cream the butter and sugar in a bowl using an electric mixer.

    Add the egg and mix well.

    Add the old fashioned oatmeal, flour, cinnamon and baking powder. Mix well using a wooden spoon.

    Add the chopped walnut and mix again.

    Let the dough chill in the fridge for 2 hours.

    Preheat the oven to 350°F. Line a baking sheet with parchment paper.

    Using a spoon or ice cream scoop, form balls of cookie dough and place them 2 inch apart on the baking sheet.

    Bake for 13-15 minutes until the bottoms of the cookies start to brown.
