VEGAN MARIONBERRY ICE CREAM WITH STAR ANISE

Quantities are shown as originally provided.
- 1 16 oz can full fat coconut cream
- 1 11.25 oz can coconut condensed milk
- 2 star anise crushed up
- 1/2 cup marionberry preserves
- 4-5 vegan graham crackers

Make sure not to shake the coconut cream. Open the can of coconut cream, and spoon the solid white parts into a bowl.

Also into the bowl, add the coconut condensed milk and, using a spoon, gently mix these two well.

Grind the star anise (I placed the star anise in a plastic bag, sealed it, and pounded it with a rolling pin until the star anise were well ground up). Then add the ground up star anise to the coconut mix and stir well.

Pour the coconut star anise mix into a freezer safe container. Drizzle the marionberry preserves through the container, just don't mix it. Then drop in chunks of graham crackers.

Let ice cream freeze at least 2 hours or best if frozen overnight.
