Jeow Mak Muang | Lao Green Mango Dip
Jeow mak muang is one of my favorite Lao dips because it goes well with all sour fruits especially unripe mango. This is my go to Lao snack whenever I'm craving sweet, spicy, and savory all in one bite.

Ingredients
Quantities are shown as originally provided.
- 1 tsp shrimp paste
- 1 tbsp fish sauce
- 1 tbsp ground bird eye chili
- 2 tbsp roasted rice powder
- 2 tbsp sugar
- 1 tsp msg
- 4 tbsp padaek
- 4 fresh bird eye chili pepper
- 1 small shallot, diced

Wash mango and sit in ice cold water

Roast chili peppers until slightly darken for 3 minutes

Roast rice on medium high until darken for 11 minutes

Let the rice and pepper cool then smash separately

In a bowl, add the shrimp paste and fish sauce then mix

Add the ground chili pepper, roast sticky rice powder, sugar, msg, padaek, fresh bird eye, and shallots
