  • 1 1/2 lbs (750g) peeled overripe bananas
  • 1 1/4 cups granulated sugar
  • 2 tablespoons brown sugar
  • 3 tablespoons fresh lime juice
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 3 dashes ground cinnamon
  • 1 tablespoon rum (optional)

Instructions

  1. 1

Mash the bananas with the back of a fork or a potato masher until they have tiny chunks.

  2. 2

Transfer the mashed bananas to a pot and simmer over low heat. Add the sugar, brown sugar, lime juice, water, and salt, stirring to combine well.

  3. 3

Continue to simmer, stirring occasionally, for about 10-15 minutes, until the banana jam thickens slightly. Stir in the ground cinnamon and rum, if using.

  4. 4

Remove from heat and let cool completely before transferring the jam to an airtight container.

  5. 5

You can keep the banana jam in the refrigerator for up to 2 weeks.
