  • 600 gram chicken breast thinly sliced
  • 300 gram egg noodles
  • 2 tablespoon vegetable oil or coconut oil for a more Southeast Asian touch
  • 1 onion sliced
  • 1 carrot
  • 1 capsicum sliced
  • 2 - 3 cloves garlic minced
  • 1 tablespoon ginger minced
  • 2 tablespoons sambal oelek
  • 1 tablespoon kecap manis Indonesian sweet soy sauce
  • 1 tablespoon fish sauce optional
  • 1 tablespoon lime juice
  • 3 - 4 lime leaves optional, adds a fragrant citrus note
  • 2 tablespoons coriander
  • 1 cup snow peas optional

Instructions

    Boil the noodles as per the packet instructions, then drain and set aside.

    In a bowl, mix sliced chicken with soy sauce, ginger, garlic, sambal oelek, and lime leaves (if using). Let it marinate for 15-30 minutes for extra flavour.

    Heat oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove and set aside.

    In the same pan, add a bit more oil if needed. Stir-fry the onions, carrots, capsicum, and any other veggies you want to include until slightly tender.

    Add the cooked noodles to the veggies. Stir in the cooked chicken, kecap manis, fish sauce, and lime juice. Toss everything together, making sure the sauce coats the noodles evenly.
