Ingredients

  • For Chicken Masala:
  • 1 tsp Oil
  • 1 tbsp Coriander seeds
  • 1 tbsp Stone flower
  • 2-3 Cinnamon sticks
  • 1 Black and 2 Green Cardamom
  • 1 Javitri / Badal flower
  • 1 Star anise
  • 2~3 Cloves
  • 3~4 Black pepper
  • 1 bay leaf
  • 1 tsp Poppy seeds
  • 3-4 Dried red chillies
  • 2 tbsp Dried grated Coconut
  • 1 tbsp Jawar flour
  • 1 tsp Oil
  • 2 medium-size chopped Onion
  • 4~5 Garlic cloves
  • Chopped Ginger
  • Finely chopped Coriander leaves
  • For Making Chicken:
  • 4 tbsp Oil
  • 1 tsp Bedgi Mirchi powder
  • 250 gm Chicken
  • Hot water
  • Salt according to taste

Instructions

    For Chicken Masala:Heat up oil in a pan.

    Add coriander seeds, stone flower, cinnamon, cardamom, javitri, star anise, cloves, black pepper, bay leaf, poppy seeds, and dried red chillies.

    Fry whole spices really good o medium heat.

  4. 4

    When spices begin to change their color and release the aroma, add grated dried coconut.

  5. 5

    Fry until coconut gets a nice golden color.

  6. 6

    When coconut begins to get a nice golden color, add jawar flour.

  7. 7

    Roast the flour with spices.

  8. 8

    When jawar flour is nicely fried, turn off the gas.

    When the roasted spices cool down a little transfer them into a blender jar.

    Blend the spices into a powder and keep aside.

    Heat up oil the same pan. Add onion, garlic, and ginger.

    Mix well and fry until onion gets nice brown color.

    When the onion cools down a little, transfer it into a blender pot which contains blended whole spices.

    Add coriander leaves. Blend the mixture into the fine masala.

    Add minimum water while blending.

    Chicken masala is already.

    For Making Chicken:Heat up oil in a pan.

    Add blended masala and mix well.

    Fry the masala on medium heat for about 3-4 minutes.

    Add bedgi mirchi powder and mix well.

    Fry masala until it releases oil.

    Add chicken in masala and mix well. Coat chicken well with masala.

    Add hot water, salt to taste, and mix well.

    Cover and cook on medium heat for about 20-25 minutes until chicken is cooked well.

    Turn off the gas and saoji chicken is already.

    Saoji chicken goes well with jawar or bajra bhakari.
