  • 200 g gula melaka
  • 500 ml water
  • Pinch of salt
  • Pandan leaves (crushed)
  • 1 packet (12g agar agar powder)
  • 500 ml Water
  • Pandan leaves (crushed)
  • 1 ⁄2 packet (6g agar agar powder)
  • 400 ml water
  • Pandan leaves (crushed)
  • 100 g sugar
  • 250 ml coconut milk (santan)
  • 1 ⁄4 tsp salt (adjust amount to taste)

Instructions

    Add water, gula melaka, pinch of salt and crushed pandan leaves in a pot.

    Boil mixture until gula melaka melts completely.

    In another pot, pour agar agar powder into water and stir well before turning on the heat.

    Add crushed pandan leaves and bring to a boil.

  5. 5

    Sieve gula melaka mixture into the pot of agar agar mixture and stir well.

    Boil both mixtures together. Switch off flame and remove pandan leaves.

    Spoon gula melaka agar agar mixture into glass containers or jelly moulds.

    Set aside to cool until the surface sets slightly.

    Mix agar agar powder and water in a pot before turning on the heat.

    Add crushed pandan leaves and let it boil.

    Add in sugar, coconut milk, salt and bring mixture to a boil.

    Turn off heat and sieve to remove pandan leaves.

    Once the bottom layer has set slightly (i.e. surface has set), gently spoon hot coconut agar agar mixture over it.

    Set aside to cool and solidify.

    Once set, chill in the refrigerator for a few hours before serving.
