Ingredients

Quantities are shown as originally provided.

  • 1 cup of your preferred chili peppers (e.g., habanero, jalapeño, or serrano for varying levels of heat)
  • 2 cloves garlic, minced
  • 1/2 cup white vinegar
  • 2 tablespoons water
  • 1 teaspoon sugar (optional, for balance)
  • 1/2 teaspoon salt
  • 2 tablespoons truffle oil or 1 tablespoon finely grated fresh truffle
  • Optional: 1 teaspoon of your favorite herbs (such as thyme or oregano) for added flavor complexity

Instructions

  1. 1

Wear gloves, and deseed and roughly chop the chili peppers. The seeds can be included for extra heat, but removing them gives a smoother, more balanced heat

  2. 2

Combine the chopped peppers, minced garlic, white vinegar, water, sugar (if using), and salt in a saucepan. Bring the mixture to a simmer over medium heat, then reduce the heat and let it simmer for about 10 minutes. This process melds the flavors together and softens the peppers

  3. 3

Carefully transfer the mixture to a blender or food processor. Add the truffle oil or grated fresh truffle (and optional herbs if using). Blend until smooth. You can add a little more water or vinegar for a thinner sauce

  4. 4

Strain the blended mixture through a fine mesh strainer into a clean bottle or jar for a smoother sauce. Press or scrape the solids with a spoon to extract as much liquid as possible. Discard the solids

  5. 5

Taste your truffle hot sauce and adjust the seasoning if necessary. You might want to add more salt, vinegar, or truffle oil to balance the flavors to your liking.
