Ingredients

  • 3 tbsp olive oil
  • 1 small yellow onion (diced)
  • 4 clove garlic (minced)
  • 1/2 cup red wine
  • 2 tbsp tomato paste
  • 1 tsp sugar
  • 1 tsp Italian seasoning
  • 1 tsp red pepper flakes
  • 1/2 tsp kosher salt
  • 28 oz Italian tomatoes (crushed (See Note 1))
  • 6 basil leaves (chopped)
  • 1/4 cup flat-leaf parsley (chopped)
  • grated pecorino or parmesan cheese

Instructions

    In a large skillet, heat the oil over a medium-high heat and add the onion and garlic. Sauté for 3 minutes, or until softened.

    Reduce the heat to medium and add the wine, tomato paste, sugar, Italian Seasoning, red pepper flakes and salt. Sauté for 2 minutes.

    Add the tomatoes, stir and simmer until reduced slightly, about 20 minutes.

    Remove from heat, add basil and stir through. Season the sauce with salt if needed. Serve immediately topped with grated pecorino or parmesan cheese and the parsley. Use over any pasta dish or meatballs.
