Ingredients
Quantities are shown as originally provided.
- 250g spaghetti (or any fresh pasta of your choice)
- 1/2 cup heavy cream
- 1/3 cup green pesto (homemade or store-bought)
- 1 cup fresh baby spinach
- 1/2 cup green peas (frozen works great)
- 2 tbsp extra virgin olive oil (EVOO)
- 2 cloves garlic, minced
- 1/4 cup grated parmesan cheese (optional but great)
- Salt & pepper to taste
- Fresh basil leaves for garnish
Instructions
- 1
Bring a big pot of salted water to a boil. Add your spaghetti and cook until al dente (check the package for time). Reserve 1/4 cup of pasta water before draining.
- 2
In a large skillet, heat the EVOO over medium heat. Add minced garlic and cook for about 1 minute, just until fragrant. Don’t let it brown.
- 3
Toss in the spinach and peas. Stir them around for 2-3 minutes until the spinach wilts and the peas are warmed through.
- 4
Pour in the heavy cream and stir in the pesto. Let it simmer for 2–3 minutes so everything blends together into a creamy green sauce.
- 5
Add your cooked pasta into the pan. Pour in a bit of that reserved pasta water if the sauce feels too thick. Stir everything together until the pasta is fully coated.
- 6
Sprinkle with parmesan if using, and season with salt and pepper to your liking. Garnish with fresh basil before serving.
