Fettuccine Alfredo Pasta (No Cream)

Ingredients
- 1 lb fettuccine pasta ((See Note 1))
- 1 cup butter ((2 sticks, 8 ounces total))
- 10 oz parmesan cheese (finely grated)

In a large pot bring 4 quarts of water to a boil over high heat.

In another deep skillet melt the butter over medium-low heat.

Add at least 2 teaspoons of kosher salt to the water. Stir to dissolve and add the dry fettuccine pasta. Cook 13 minutes, or 2 minutes if using fresh pasta.

Using tongs, transfer the pasta to the skillet with melted butter, tossing to coat all over in the butter.

Turn off the heat and add the finely grated cheese, tossing the pasta gently until the cheese is melted and sauce is thick and creamy. Add the pasta water, a tablespoon at a time, tossing and emulsifying the sauce until a desired silky consistency is achieved. You don't want it too thin and watery, you want it to cling to the pasta.
